- Clarification: Bobó is made with boiled and beaten cassava and is prepared with palm oil (which is not easy to find in some cities). As this recipe is made with pumpkin and without palm (in case you don't have it either) I preferred to call it "false bobó".
- For mise en place: Peel the tomatoes and peppers and cut into cubes Cut the onions in half moon Peel, cook and puree the kabotia squash in a blender Cut the palm hearts into slices And cut the garlic in the shape of your choice.
- Sauté the onion and garlic in olive oil, after a while add the peppers and finally the tomatoes
- After sautéing the vegetables, add the pumpkin puree, mix well, season to taste and place the palmito slices in the pan. Cover and leave the pan on low heat for a few minutes (5 to 10min)
- To finish, add the coconut milk, a few drops of lemon, incorporate everything into the recipe and finish with coriander leaves and olive oil.
- Ps: for me the recipe combines a lot with pepper. Cayenne, cumari or girl's finger can be added before the pumpkin puree!
