Eggplant cut into medium cubes1.5 kg
Red bell pepper cut into strips1/2 cup
Yellow bell pepper cut into strips1/2 cup
Chopped Onion3/4 cup
Chopped Garlic1 tablespoon
Chopped Parsley1 dessert spoon
Olive oil100 ml
Sea Salt to taste
Red Wine Vinegar1 dessert spoon
Coarsely chopped walnuts1/3 cup

In a mold, mix all the ingredients well and place in a preheated oven at 220ºC to bake for about 30 minutes.
Stir the caponata a few times during preparation.
Transfer to another container and serve warm or cold.
