  • Recipe
  • Eggplant cut into medium cubes1.5 kg
  • Red bell pepper cut into strips1/2 cup
  • Yellow bell pepper cut into strips1/2 cup
  • Chopped Onion3/4 cup
  • Chopped Garlic1 tablespoon
  • Chopped Parsley1 dessert spoon
  • Olive oil100 ml
  • Sea Salt to taste
  • Red Wine Vinegar1 dessert spoon
  • Coarsely chopped walnuts1/3 cup
  1. In a mold, mix all the ingredients well and place in a preheated oven at 220ÂșC to bake for about 30 minutes.
  2. Stir the caponata a few times during preparation.
  3. Transfer to another container and serve warm or cold.
