- Raisins to taste

- Vinegar1/2 cup

- Cut the eggplants, peppers and onions into slices lengthwise and put them in the roasting pan.
- Season with salt and pepper to taste.
- Now mix the olives and raisins.
- Drizzle with plenty of olive oil, about half a cup. And also a little vinegar.
- Now put it in the oven with the baking sheet covered with aluminum foil. For about 40 minutes.
