  • Butter beans1 cup
  • Palm oil3 tablespoon
  • Red Onion1 unit(s)
  • Italian Tomato2 unit(s)
  • Grated Ginger1 tablespoon
  • Garlic cloves4 unit(s)
  • Chili Pepper1 unit(s)
  • Bay leaf2 unit(s)
  • Thyme sprigs5 unit(s)
  • Tomato extract3 tablespoon
  • Curry Powder1/2 tablespoon
  • Coriander Powder1/2 tablespoon
  • Fenugreek Seed1 teaspoon
  • Miso1 tablespoon
  • Chopped fresh coriander1 tablespoon
  • Salt and pepper to taste
  1. Soak the beans for at least 8 hours
  2. Discard the water and reserve the beans.
  3. In the blender beat the onion, tomatoes, ginger, garlic and pepper until you get a paste. Reserve.
  4. In a pan over medium heat add the palm oil and fenugreek seeds, bay leaf and thyme. When they start to pop slightly, add the beaten paste, tomato paste, miso and dry spices. Mix well and boil for about 10 minutes.
  5. Add the beans, mix well and let cook for about 30 minutes or until the beans are soft. If necessary, add hot water so that the broth does not dry out completely.
  6. When the beans are soft, but not falling apart, turn off the heat.
  7. Hit the salt and pepper and finish with cilantro.
