- Peel the bananas, cut them in half - lengthwise (see photo) season the bananas with the lemon juice, garlic and salt and leave to marinate for 1 h
- While the banana is marinating, cut all the other ingredients into slices, and reserve them all separately.
- After the banana time is over, let's assemble the moqueca. Preferably in a clay pot, but it can be in any other pot with a lid. Start with a layer of the onion, then the peppers, tomato, cilantro and bananas, repeat this sequence… depending on the size of the pan it can have 2 to 3 layers.
- Now pour the palm oil over the last layer, cover the pan and cook for approximately 30 minutes on low heat.
- When the water starts to release, add the coconut milk and finish cooking, approximately 20 minutes more!
