  • Garlic Clove4 unit(s)
  • Mixed Quinoa50 g
  • Portobello mushroom100 g
  • Baroa Potato200 g
  • Carrot100 g
  • Kale1/2 unit(s)
  • Vegetable broth1 l
  • Grated Ginger1 tablespoon
  • Saffron1 tablespoon
  1. In a pan add a drizzle of olive oil and saute the chopped onion and garlic
  2. Then add the sliced mushroom (it can be another type of mushroom or you can replace it with another protein)
  3. Add the carrots and potatoes cut into cubes. Grated ginger and saffron and quinoa.
  4. Add the vegetable broth and cover the pan and cook for 20 minutes.
  5. Finish with finely sliced kale and season with salt and pepper.
