- Vegetable broth1 l
- Salt to taste
- Black pepper to taste
- Nutmeg to taste
- Chopped parsley to taste

- Vegetable oil3 tablespoon
- Garlic1 unit(s)
- Onion1 unit(s)
- Extra Virgin Olive Oil1 coffee spoon
- Clean and cut the pumpkin into small pieces, without the skin.
- Chop the onion and garlic.
- In a large heavy-bottomed pan, sear the squash with the onion and garlic.
- Add the broth. Let it cook until it is soft when cut.
- Season with salt and pepper. Put the nutmeg.
- Knead well or process. Season and decorate with parsley.
- Serve hot with a drizzle of extra virgin olive oil.
