- Manioca Butter Beans200 g
- Dried meat50 g
- Finely chopped pumpkin1 unit(s)
- Small chopped onion1 unit(s)
- Minced Garlic4 unit(s)
- Red Bell Pepper1/2 unit(s)
- Yellow bell pepper1/2 unit(s)
- Salt and pepper to taste to taste
- Ground Saffron1/2 dessert spoon
- Before preparation, cook two hundred grams of Manioca butter beans according to the package instructions, remove the water and set aside
- Desalt the dried meat a little by immersing it in water for 00:30 mins.
- Meanwhile in a pressure cooker sauté the garlic, onion, peppers and pumpkin
- Cut the dried meat into small cubes and sauté it together with the other ingredients, add saffron, black pepper and taste to see if you need salt
- Put half a cup of water, also the pan and leave on medium heat for 00:15 minutes.
- After that time, check that all the ingredients are cooked, they should be al dente, there is no need to dismantle them.
- Add the already cooked butter beans, with the pan open, let it thicken and enhance the flavor over low heat for a few more minutes.
- Add finely chopped coriander and serve warm
- Enjoy!
