- Recipe
- Frozen fresh peas300 g
- Olive oil2 tablespoon
- Butter1 dessert spoon
- Garlic Cloves2 unit(s)
- Filtered or flavored water (see below)3 cup
- Salt to taste
- Freshly ground black pepper to taste
- Shredded and Fried Bacon2 tablespoon
- Parsley (sprig to finish)1 unit(s)
- Flavored water: This step is optional, but the result is much better. Boil 1 liter of water with half an onion, 1 clove of garlic, one or two cloves, a little piece of anise (these spices are optional, but they give an incredible flavor), a piece of carrot, I also add bay leaf, celery, garlic pore. (I know that a lot of people don't have the habit of having these aromatic vegetables at home. I also buy them from time to time, but whenever I buy I freeze some pieces to make these jet broths. But if you don't have any of that at home, great! .Use hot water. Just be sure to do it).
- To make the soup: heat the frying pan, drizzle with a generous drizzle of olive oil (you can add a little bit of butter too) and add all the frozen peas in the package. Saute over low heat until thawed, add 2 cloves of minced garlic and season with salt and freshly ground black pepper. Add the hot water (if it is flavored, strain it first) in the peas sautéed with garlic. Bring to a boil and hit the mixer straight into the pan. Taste for salt and pepper, if necessary, adjust the seasoning. It is even better finished with a drizzle of olive oil and toasted bacon. Soup made in 15 minutes. It's delicious.
