unsalted butter

1/2 cup dry white wine

wheat flour

vegetable or meat broth

thick slices of firm bread

grated Gruyere cheese

Descasque as cebolas e corte-as em meia lua. Reserve;

Peel the onions and cut them into half moons. Reserve;

Em uma panela grande derreta a manteiga e doure lentamente a cebola. Acrescente o vinho branco e deixe reduzir pela metade;

In a large pan melt the butter and slowly brown the onion. Add the white wine and let it reduce by half;

Coloque a farinha de trigo e mexa bem para incorporar. Em seguida coloque o caldo de legumes ou carne e cozinhe em fogo médio por aproximadamente 30 minutos. Prove e adicione sal e pimenta do reino se achara necessario;

Put the wheat flour and stir well to incorporate. Then add the vegetable or meat broth and cook over medium heat for approximately 30 minutes. Taste and add salt and black pepper if necessary;

Coloque a sopa em recipientes individuais que possa ir ao forno, cubra-as com as fatias do pão e salpique uma quantidade generosa de gruyère ralado;

Place the soup in individual ovenproof containers, cover them with the bread slices and sprinkle with a generous amount of grated gruyère;

Leve para gratinar até tostar o queijo. Sirva imdediatamente.

Take it to gratin until the cheese toasts. Serve immediately.
