  • Curau: corn on the cob5 unit(s)
  • Whole milk200 ml
  • Sugar to taste
  • Salt to taste
  • Caruru with bacon: bacon30 g
  • White onion10 g
  • Caruru leaf100 g
  • Parmesan foam: finely grated Parmesan cheese50 g
  • Milk100 ml
  • Lecithin2 g
  1. Curau: cut the corn and beat it with milk.
  2. Strain and cook over low heat with the sugar and salt, until it reaches consistency.
  3. Caruru with bacon: finely chop the bacon and onion and sauté.
  4. Cook the pigeon pea in water and then sauté it with the previous mixture.
  5. Parmesan foam: put the cheese with the warm milk and the lecithin in a blender.
  6. Strain and whisk ninety to serve just the foam.
  7. In a deep dish, place the curau first, on top the pigeon pea sautéed with bacon, and finally the foam.
