In the pressure cooker, heat the extra virgin olive oil, fry the chicken cubes well until they are golden brown. After adding the garlic, onion and sauté well, add the tomato and let it sauté until they wither.
After, add all the seasonings, the vegetables, the peeled tomato sauce, mix well with the sauté and add the water. Test the salt, cover the pan and cook under pressure for 10 minutes and then serve with Italian bread, croutons or whatever you prefer.
Tip: If you want a very thick and full-bodied soup, separate a little from the boiled potato, mash it well and return to the pan, mixing well in the ready-made soup, it's delicious!
