Peel the roots and bring to the boil to cook. Choose to buy new roots so cooking is quicker, texture and flavor are better.
Cooked, mash them with a fork and reserve the cooking water or hit the blender with the cooking water (depends on your choice when buying them). Reserve.
In a pan fry the bacon, almost golden, add the sausage and fry them in the point of your choice. It may release a lot of fat, so remove a little then take the garlic and onion to brown together. Add the cassava and the cooking water, stir so it doesn't stick to the bottom. If necessary add more water and let it boil. Season with salt and pepper. And the green smell. Is ready! Great for cold days.
