- Canjiquinha2 cup
- Pork Ribs1/2 kg
- Bacon200 g
- Pepperoni Sausage1 unit(s)
- Olive oil2 tablespoon
- Chopped Onion1 unit(s)
- Crushed garlic cloves2 unit(s)
- Chopped Tomatoes2 unit(s)
- Cabbage leaves4 unit(s)
- Salt to taste
- Green Smell to taste
- Wash and drain the canjiquinha.
- Place in a pan, cover with cold water (a palm above the hominy). Bring to a boil over high heat.
- Then lower the heat and cook until tender, remove from heat and set aside.
- Heat the oil and fry the ribs, sausage and bacon.
- Remove from heat, place on a paper towel to drain and set aside.
- In a pan, place the meat, onion, garlic and tomatoes. Let it cook for 5 minutes.
- Add the hominy with a little of the cooking water and let it boil for about 30 minutes (with the pan covered). Or until the ribs are tender, basting little by little with the cooking water.
- Add the salt, the green smell, the chopped cabbage and remove from the heat and serve hot.
