Zucchini lasagna with chicken

  • 2 medium zucchinis2 unit(s)
  • 2 tablespoons of olive oil2 tablespoon
  • 1 medium onion, diced1 unit(s)
  • 2 cloves of crushed garlic2 unit(s)
  • 400 g shredded chicken400 g
  • 1 chopped tomato1 unit(s)
  • 1 teaspoon paprika1 teaspoon
  • 2 tablespoons of tomato paste2 tablespoon
  • Salt and pepper to taste1 to taste
  • 100 g of cheese100 g
  • 1 cup of cottage cheese1 unit(s)
  1. 1.     Clean the zucchinis, cut them into thin slices (lengthwise), sprinkle with salt and pepper (so they release some of the water) and set aside.
  2. In a pan, heat the oil and sauté the onion and garlic.
  3. When the onion starts to become transparent, add the chicken, tomato, paprika, tomato paste, salt, pepper and stir well until the stuffing is very dry.
  4. To assemble, dry the zucchinis with a paper towel and grease a baking sheet with olive oil.
  5. Make a layer of zucchini, another with the chicken stuffing and one of the cheese. Continue assembling until the pan is full and finish with a layer of zucchini.
  6. To finish, place the curd, on top of the last layer, and cheese;
  7. Bake in a preheated oven at 180 degrees for about 30 minutes, or until the zucchini is soft.
