Tapioca and spinach cake with coalho cheese

Ingredients

  • Granulated Tapioca | 1 cup
  • Curd cheese | 250 g
  • Milk | 400 ml
  • Spinach | 100 g
  • Salt |  to taste
  • Black pepper |  to taste
  • Olive oil |  to taste

Recipe

  1. In a frying pan, put a thread of olive oil and wither the spinach until they lose 2/3 of their volume, add the milk, season with salt and pepper. Take the entire contents of the skillet to the blender.
  2. Grate the coalho cheese and add it to the tapioca in a large bowl, then add the milk with spinach.
  3. Mix carefully to avoid lumps, and after cooling slightly mold the cookies. Fry in hot oil and serve immediately.
