Cook the potato cut into cubes and set aside.
Beat the eggs well, add the cheese, salt, black pepper and the green smell.
In a non-stick frying pan, put the oil to heat, add the onion and carrot, let it press.
Pour the beaten egg on top, spread evenly and cook over low heat.
Flip to the other side and let it brown.
Then serve while still hot.
