- Put the milk in a pan, when it boils, turn it off.
- Add the 4 tablespoons of vinegar and gently stir to spread.
- Cover the pan and let the milk “cut” for 15 minutes.
- After that, put it to “soar”. This process is to separate the whey from the cheese. Just put the curdled milk in a sieve covered by a fine dish towel or it can also be in a paper coffee rennet.
- To get a creamy ricotta texture, 15 minutes of whey is enough. If you want a firmer ricotta, leave it longer.
- After removing the whey, place the ricotta in a container and add salt and black pepper to taste. It's ready to use, enjoy!
