  1. Put the milk in a pan, when it boils, turn it off.
  2. Add the 4 tablespoons of vinegar and gently stir to spread.
  3. Cover the pan and let the milk “cut” for 15 minutes.
  4. After that, put it to “soar”. This process is to separate the whey from the cheese. Just put the curdled milk in a sieve covered by a fine dish towel or it can also be in a paper coffee rennet.
  5. To get a creamy ricotta texture, 15 minutes of whey is enough. If you want a firmer ricotta, leave it longer.
  6. After removing the whey, place the ricotta in a container and add salt and black pepper to taste. It's ready to use, enjoy!
