  • For the cookie. l
  • Wheat flour240 g
  • Brown sugar90 g
  • Crystal sugar70 g
  • Butter (unsalted)100 g
  • Praline (your choice45 g
  • Baking soda6 g
  • Egg1 unit(s)
  • Salt (pinch)1 g
  • For the caramel. l
  • Sour cream (above 20% fat)200 g
  • Crystal sugar100 g
  • Flower salt or pinch of salt to taste
  • Cold butter70 g
  1. Cookie preparation method: Mix the sugars+butter and make a paste. Add praline, egg and mix. Finally, gradually add the flour, baking soda and salt. Make balls of 50g to 60g and distribute on a parchment paper or cooking mat. Bake for 10 to 12 min at 165°C
  2. How to make the caramel: Melt the sugar, add the warm cream and mix well. Be careful at this step! Cook up to 105°C. Remove from heat, emulsify the butter and fleur de sel. Set aside until you reach the texture for use.
  3. For praline, I made a recipe available here on delirec, and you should make half a praline recipe.
  4. Assembly: Watch the video to see the assembly. Tip: save some oilseeds to decorate
