Take a deep pan to the fire, add the broth, butter and salt.
As soon as it boils, sieve the flour and stir constantly, so as not to form lumps.
Next, add the boiled and mashed potatoes, and stir vigorously to incorporate all the dough ingredients.
The point is when the dough starts to loosen from the bottom of the pan, and forms a light cone.
Spread the dough on a bench and let it cool.
Roll out the dough in the palm of your hand in the shape of a circle, and place the filling in the center (Attached photo)
Close the dough with your fingertips, in the shape of a coxinha (Attached photo)
Mix the egg whites and water, pass the coxinha first in this mixture and then in the breadcrumbs (Attached photo)
Fry the drumsticks in hot oil until golden. Serve next.
