  • English Potato1/2 kg
  • Grated Parmesan Cheese3 tablespoon
  • Butter1 tablespoon
  • Gems2 unit(s)
  • Wheat flour to taste
  • Oil for frying to taste
  • Whole eggs3 unit(s)
  • Black pepper to taste
  • Salt to taste
  1. Cook the potatoes, unpeeled, in plenty of water. Peel and pass, while still hot, through the juicer.
  2. Add to the potato mass, two egg yolks, the cheese and the butter.
  3. Mix quickly and season with salt and pepper. Always stirring, add wheat flour little by little, until you get a well-connected dough and consistency that you can roll.
  4. Take small portions of the dough and, with lightly floured hands, roll up the croquettes.
  5. Roll in breadcrumbs, beaten eggs and again in breadcrumbs.
  6. Fry, gradually, in hot oil, place in a bowl with paper towel to get dry.
  7. Serve then.
