- Picanha fat100 g
- Bacon250 g
- Mustard100 g
- Salt to taste
- Nut Cheese600 g
- Breadcrumbs100 g
- Mayonnaise200 g
- Smoke powder1 coffee spoon
- Lettuce to taste
- Tomato to taste
- Burger buns8 unit(s)
- Cut all the meat and 150g of bacon into cubes. Mix and pass through the grinder. (You can also mash it in a food processor or blend it with the tip of a knife.
- Add the salt, mustard and mix until you get a homogeneous mass.
- Separate "balls" of 180g, throw them from one hand to the other to compact.
- Model in a circular shape with a thickness of 2 cm. (You can use your hands or a stainless steel rim). Reserve.
- In a container mix the mayonnaise with the smoke powder. Reserve.
- Fry the rest of the bacon until crispy. Blend in a blender along with the breadcrumbs. The result will be a bacon crumble. Reserve.
- Grill in skillet, griddle or grill for 5 minutes on each side, or until desired doneness.
- Cut the nozinho cheese into thin slices and melt in a skillet or griddle until you create a crispy, golden layer.
- Assemble the buns with lettuce, tomato and smoked mayonnaise. Put the hamburger, the melted cheese and finish with the bacon farofa. Serve with vinaigrette as a side dish. .
