Ingredients: 1 cup Orange Juice; 2 unit(s) Egg; 1 cup Canola or Sunflower Oil; 1/2 cup Dried Apricot; 1 cup Wheat Flour; 1/2 cup Coconut Flour; 1 tablespoon Baking powder

Pique os damasco, deixe por 20 minutos de molho em água quente, depois amasse com garfo até virar uma pastinha e reserve.


Chop the apricots, let them soak in hot water for 20 minutes, then mash them with a fork until they become a paste and set aside.


Com ajuda de um fouet bata bem os ovos até ficar bem clarinho, adicione o óleo e metade do damasco e bata por 3 minutos.
Adicione a farinha e o suco da laranja (usei a Bahia porque tem mais caldo) misture bem até que se incorporem, adicione o restante do damasco e por último o fermento.
Se você quiser pode colocar uns pedacinhos extras de damasco no meio da massa que fica uma delícia.
Disponha em formas de cupcake e leve pra assar em forno pré aquecido por 30 minutos a 180 graus.

If you want you can put a few extra pieces of apricot in the middle of the dough which is delicious.
Arrange in cupcake molds and bake in a preheated oven for 30 minutes at 180 degrees.


♻️ você pode substituir as farinhas, se preferir pode usar tudo de trigo ou farinha de aveia, e pra quem não gosta de damasco pode usar a uva passa branca e para maiores de 2 anos pode substituir o damasco pela mesma medida de açúcar demerara ou mascavo.
