  • Wheat Flour250 g
  • Organic Dry Yeast7 g
  • Water150 ml
  • Olive oil4 g
  • Salt4 g
  • Brown Sugar15 g
  • Cumin1 g
  • Onion100 g
  • Butter10 g
  1. Make the poolish (part of the flour + water + yeast). Cover with plastic wrap and let it ferment in a warm and/or dark place (inside the microwave) for about 30min.
  2. Saute onion in butter.
  3. Add the dry ingredients, open a crown and add the still hot butter and the poolish.
  4. Knead well until it becomes a smooth dough.
  5. Boil 50g and let it ferment for 50 minutes.
  6. Place in a greased shape and brush with egg and water.
  7. Bake in a dry oven at 180° until golden.
