  • yellow pepper1 unit(s)
  • Moroccan couscous1 cup
  • raisins1 cup
  • chopped cashew nuts1 cup
  1. In a frying pan with olive oil, fry the onion, garlic, add the almonds and sauté, then add the raisins and apricot
  2. In a refractory, dissolve the vegetable broth in boiling water and add a spoonful of butter, put all the couscous in this water, cover and let it rest for 5 minutes so that the couscous absorbs all the water
  3. Add the almond mixture to the couscous and mix well, adjusting the salt and pepper to taste.
  4. Sprinkle with chopped parsley.
