  1. - Cook the sweet potato until it is soft, I cook it with the skin on. Once warm, remove the skin and mash the potato, use a potato masher or a fork. - Mix the potato with the sugar, eggs and butter.
  2. - In another container, mix the warm milk with the yeast. Then mix it in the dough and add the wheat flour until the dough is uniform (I used 4 cups, but you may use a little more, it will depend on the humidity of the potato you use and the size of the eggs)). Cover and let rest until doubled in volume, about 1 hour, leave in a quiet place such as in the oven (off).
