Eggplant1 unit(s)
Olive oil1 tablespoon
Garlic Powder1 teaspoon
Salt to taste
Oregano1 teaspoon
Parmesan cheese1/2 cup
Egg1 unit(s)
Wheat flour70 g
Breadcrumbs1/2 cup

Start by separating the ingredients to keep the preparation well organized.
Cut the eggplant into cubes and if you want you can peel it.
Place a pan over medium heat, pour in the oil and sauté the cubed eggplant with a pinch of salt.
Wait for it to cool, put it in the grinder with the garlic powder, oregano and parmesan cheese.
Grind lightly, leaving the dough still chunky.
Place in a bowl, add the egg and mix well. Then add the wheat flour and cassava flour and mix well again. Refrigerate for 1 hour.
Take a portion of the dough and shape the croquettes.
Place on a baking sheet and bake in a preheated oven at 180 degrees for 15 minutes or until golden.
If you want, you can make this croquette fried instead of baked.
