- Salt to taste
- Oregano1 teaspoon
- Parmesan cheese1/2 cup

- Wheat flour70 g
- Breadcrumbs1/2 cup
- Start by separating the ingredients to keep the preparation well organized.
- Cut the eggplant into cubes and if you want you can peel it.
- Place a pan over medium heat, pour in the oil and sauté the cubed eggplant with a pinch of salt.
- Wait for it to cool, put it in the grinder with the garlic powder, oregano and parmesan cheese.
- Grind lightly, leaving the dough still chunky.
- Place in a bowl, add the egg and mix well. Then add the wheat flour and cassava flour and mix well again. Refrigerate for 1 hour.
- Take a portion of the dough and shape the croquettes.
- Place on a baking sheet and bake in a preheated oven at 180 degrees for 15 minutes or until golden.
- If you want, you can make this croquette fried instead of baked.
- Prepare a homemade sauce to serve with this eggplant croquette and enjoy!
