Crunchy fried chicken

First of all, make a marinade, putting the chicken pieces, yogurt, 1 tablespoon of salt and mustard powder in a bowl.
Mix well and refrigerate for at least 2 hours, up to 24 hours.
Prepare the dry mix by placing 350g of Wheat Flour, 150g of Soy Flour, a pinch of salt and 1/2 tablespoon of hot paprika in a bowl... Mix and set aside.
Prepare the liquid mixture, placing in a bowl 200g of Wheat Flour, 100g of Soy Flour, 2 eggs, 1/2 spoon of sweet paprika, 1/2 of salt, 1 spoon of cayenne pepper (if you want it more spicy, you can increase ) and finish adding the sparkling water, mixing gently so as not to expel all the gas from the mixture.
Remove the marinade from the fridge, take one piece of chicken at a time, dip into the dry mix, then dip into the liquid mix, then dip into the dry mix again.
Fry at 170ºC approximately, leaving it golden and enjoy!!!
