- You heat the milk (can't boil), put the salt and rennet dissolved in the water. Stir to mix... Let the milk rest (curdle) for about 15 minutes. Then, take a clean dish towel and place it inside a colander. Pour the curdled milk inside, to drain the whey. As I don't have my own cheese company, I took a round tapoer and pierced the entire bottom and side. Assemble the cheese inside this shape. * To fill, just put some of the "dough" at the bottom, put the stuffing (guava paste), and cover with the rest of the curd dough... Leave in the fridge for at least 3 hours
