- Buffalo flank steak1 kg

- Buffalo mozzarella600 g
- Lettuce to taste
- Tomato to taste
- Burger buns6 unit(s)
- Cut the meat into cubes and pass through the grinder. (It can also be crushed in a food processor or beaten on the tip of the knife).
- season with salt
- Mix well until a homogeneous mass is formed.
- Separate "balls" of 160g, throw them from one hand to the other to compact.
- Model in a circular shape with a thickness of 2 cm. (You can use your hands or a stainless steel rim).
- Grill in the skillet, griddle or grill for 5 minutes of each laso, or until you get the desired point.
- Place slices of buffalo mozzarella over the burger, already done, and cover with a damper to melt.
- Separate the bread, already with lettuce and romate, and assemble the sandwich. I created this recipe on Ilha do Marajó, Pará, for the project Viajando no hamburger Brasileiro.
