  • Rice flour1 cup
  • Almond flour1 cup
  • Ghee (or regular) butter1/4 cup
  • Eggs3 unit(s)
  • Date syrup or molasses1/4 cup
  • Cinnamon powder1 teaspoon
  • Chemical Yeast1 teaspoon
  • Vanilla extract (optional)1/2 teaspoon
  • Apple Cider Vinegar1 teaspoon
  • Pinch of salt to taste
  • Bananas (for topping)2 unit(s)
  1. Mash the bananas until they form a puree.
  2. Add the three eggs, one at a time, and mix them into the puree until smooth, with a fork.
  3. Add the other ingredients and incorporate everything very well with the use of a fouet, until a smooth dough is formed, finally adding the chemical yeast.
  4. In a small form, greased with coconut oil or ghee, pour the dough and finish the topping with two sliced bananas and cinnamon powder (as shown in the video).
  5. Bake in preheated oven for 45 minutes or when golden and you insert a toothpick, it comes out clean.
  6. Unmold with it already cold It's ready to serve. If you prefer, cut into slices and freeze, to eat when you feel like it. It lasts up to 3 months frozen.
