Beat the egg, butter, corn, cream and sweetener in a mixer or blender.
In a bowl place the coconut flour and yeast.
Pour the mixture out of the blender and mix well. If the dough is too thick (if you use coconut flour it draws a lot of liquid) add the coconut water and mix well.
Put it in mugs or molds that can go in the microwave. Makes about 5 cookies.
Microwave for 2:30 minutes.
Garnish with grated coconut, cinnamon and corn.
