  • Homemade mayonnaise100 g
  • Chopped red onion2 tablespoon
  • Cucumber without skin and without seeds, chopped2 tablespoon
  • Chopped chives2 tablespoon
  • Dijon mustard1 teaspoon
  • Extra Virgin Olive Oil4 tablespoon
  • Lemon juice1 tablespoon
  • Ripe avocado type avocado2 unit(s)
  • Extra Virgin Olive Oil1/2 cup
  • Lemon juice4 tablespoon
  • Salt and Black Pepper to taste
  • Tabasco to taste
  • Radish for decoration to taste
  • Ciboulete for decoration to taste
  1. Mix the first 8 ingredients, adjust salt and pepper and freeze;
  2. Cut the radish into little sticks and put it in ice water to get crispy; Cut the chives to the same size as the radish;
  3. In a blender, place the avocado pulp, lemon, tabasco, salt pepper, turn on at least and add the olive oil in a thread; making a very silky cream. Place in a tube or bag to decorate;
  4. Separate the tartare into 4 portions, if possible use a ring when taking it to the dishes; garnish with drops of avocado, and chives and radishes; serve immediately
