- Coconut Milk300 ml
- Clean shrimp without shell or gut500 g
- Pineapple (sliced)4 unit(s)
- Chopped Onion1 unit(s)
- Coriander or parsley to taste
- Salt and Black Pepper to taste
- Season the shrimp with salt and pepper
- in a pan preheated with oil, brown the shrimp. Do not add them all at once, brown for 1-2 minutes on each side and remove the shrimp, set aside.
- in the same pan, add more oil and sauté the onion
- add pineapple. Let it sauté with the onion for a few minutes. (If the pineapple is not very ripe, you can add a pinch of sugar to caramelize it)
- add the coconut milk, season the sauce with salt and pepper and let it reduce.
- add the prawns again and finish with cilantro or chopped parsley.
