Season the squid with salt and pepper to taste.
Mix the wheat flour, cornstarch, paprika and garlic powder. Dry the squid with a paper towel and gradually pass through this mixture, removing the excess with the help of a sieve (leave the legs for last).
Fry in hot oil little by little until it starts to brown (it's fast, don't leave too much so it doesn't harden, when in doubt remove one and taste, it has to be soft).
Remembering that it's not breaded squid (for breading it's wheat flour, egg and breadcrumbs or panko. It's another recipe!!), the intention here is to form a light cone on the outside and make it soft on the inside.
Serve with lemon!
