- Dry white wine1/2 cup

- Fresh cream2 tablespoon
- Butter1 cup
- Parsley2 tablespoon
- Dry the fish fillets and with salt and pepper.
- Heat a frying pan, add the olive oil and 1 tablespoon of butter. Grill the fillets, turning 2 minutes on each side.
- In a pan, add the wine, the lemon and the chopped onion and the cream. When it starts to boil, reduce the temperature and reduce to a third of the total amount over medium heat.
- Lower the heat and add the cold butter spoon by spoon, stirring well after each addition. Hit the salt.
