  • Clean medium pink shrimp1 kg
  • Salt to taste
  • Black pepper to taste
  • Extra Virgin Olive Oil3 tablespoon
  • Butter (use half at the beginning of the preparation and half at the end)50 g
  • Chopped Onion1 unit(s)
  • Arborio rice315 g
  • Dry white wine1 cup
  • Fish broth (or vegetables or shrimp)1500 ml
  • Sieved Peeled Tomato (can)1 unit(s)
  • Grated Parmesan Cheese100 g
  • Sicilian lemon (zest)1 unit(s)
  • Chopped Parsley2 tablespoon
  1. Clean the shrimp and season with salt and pepper. Heat a drizzle of olive oil and leave the prawns for 2 minutes on each side until they turn pink. Remove and reserve.
  2. Heat a little more oil with half the butter and sauté the onion for 3 min. Add the arborio rice and stir for 2 minutes. Add the white wine and stir until evaporated.
  3. Gradually pour in the broth until the risotto is al dente, stirring constantly during this process. In the middle of cooking the rice, place the sieved peeled tomato. When the rice is al dente, turn off the heat (at this point the risotto cannot be dry, it must be with broth).
  4. With the fire off, add the other half of the butter, the grated cheese and the shrimp and stir vigorously until the butter melts. Finish with parsley and lemon zest. Leave covered for five minutes before serving. Enjoy your food!
