Shrimp Bobó (Makes 6 servings)

Numa peneira, lave bem as cascas e cabeças de camarão sob a água corrente. Com a lateral da lâmina da faca, amasse e descasque o dente de alho. Descasque e corte a cebola em meias-luas finas. No pilão, quebre as sementes de coentro.

In a sieve, wash the shrimp shells and heads well under running water. With the side of the knife blade, crush and peel the garlic clove. Peel and cut the onion into thin half moons. In the mortar, break the coriander seeds.

Leve uma panela média ao fogo médio. Quando aquecer, regue com o azeite de dendê, coloque as cascas e cabeças do camarão e refogue por 10 minutos, até ganharem um tom alaranjado e formar um douradinho no fundo da panela – essa etapa é fundamental para dar sabor ao caldo.

Place a medium saucepan over medium heat. When it heats up, drizzle with palm oil, place the shrimp shells and heads and sauté for 10 minutes, until they take on an orange hue and form a golden hue at the bottom of the pan – this step is essential to flavor the broth.

Junte o alho, a cebola, o louro, as sementes de coentro e mexa por 2 minutos até a cebola murchar. Regue com a água aos poucos, raspando o fundo da panela com a espátula para dissolver os queimadinhos e aumente o fogo. Depois que ferver, deixe cozinhar por mais 40 minutos em fogo baixo, até o caldo reduzir pela metade.

Add the garlic, onion, bay leaf, coriander seeds and stir for 2 minutes until the onion wilts. Add the water little by little, scraping the bottom of the pan with the spatula to dissolve the burns and increase the heat. After it boils, let it cook for another 40 minutes over low heat, until the broth reduces by half.

Sobre uma tigela, passe o caldo por uma peneira, pressionando com as costas de uma colher para extrair todo o líquido, cerca de 2 ½ xícaras (chá). Reserve.

Over a bowl, pass the broth through a sieve, pressing with the back of a spoon to extract all the liquid, about 2 ½ cups (tea). Reserve.
