- Clean shrimp7 kg
- fresh white fish (tilapia, sea bass or similar), cut into cubes7 kg
- Ripe avocados cut into cubes25 unit(s)
- Chopped tomatoes5 kg
- Chopped onion3 kg
- Chopped green pepper3 kg
- Tomato sauce5 l
- Cooked black beans3 kg
- Cooked green beans3 kg
- Fresh lemon juice2 l
- jalapeño peppers, chopped (adjust to taste)20 unit(s)
- Bunches of chopped fresh coriander5 unit(s)
- Garlic heads5 unit(s)
- Dried fruits3 kg
- Salt and pepper to taste
- Vegetable oil10 tablespoon
- In a large pan, sauté the onion and garlic until golden.
- Add the peppers and sauté for a few more minutes.
- Add the shrimp and fish, stirring well until they are cooked.
- Add diced tomatoes, tomato paste, cumin, paprika, oregano, salt and pepper. Let it cook for about 20 minutes.
- When ready to serve, add the avocado cubes and dried fruit.
- Garnish with fresh chopped cilantro before serving.
