Salmon with passion fruit sauce

  • Salmon500 g
  • Sicilian lemon1/2 unit(s)
  • Concentrated passion fruit juice100 ml
  • passion fruit1 unit(s)
  • Sugar1 tablespoon
  • Starch1 teaspoon
  • Cold butter1/2 tablespoon
  • Salt and spices1 to taste
  1. Season the salmon with salt, lemon and seasonings in a roasting pan.
  2. Cover with aluminum foil and bake at 200 degrees for 20 minutes.
  3. For the syrup over medium heat, add the passion fruit juice, fruit pulp, sugar and a pinch of salt. Stir well and let it boil for a few minutes.
  4. Then add the butter and the starch already diluted in a little water. Mix everything and turn off the heat.
  5. As soon as you take the salmon out of the oven, finish it with the passion fruit sauce.
