- Salmon fillets (+-4)500 g
- fresh cream250 ml
- Coarsely chopped spinach3 cup
- chopped onion1/2 unit(s)
- Minced Garlic3 unit(s)
- Grated Parmesan1/2 cup
- Chopped sun-dried tomato50 g
- olive oil1 tablespoon
- Dry white wine1/3 cup
- Chopped Parsley1 to taste
- Salt and pepper1 to taste
- Season the salmon fillets with salt and pepper. Grill on both sides (about 3 minutes on each side) in a little oil. Reserve!
- Sauté the onion in olive oil, when it is wilting, add the garlic until it browns a little.
- Add the white wine, let the alcohol evaporate and add the spinach. When wilted, add the sun-dried tomatoes. Stir between additions of ingredients.
- Add fresh cream and Parmesan cheese. Mix and place the salmon fillets.
- When it starts to boil, turn off the heat and sprinkle with fresh parsley.
