Lemon Risotto with Grilled Salmon

  • Dry white wine100 ml
  • Butter100 g
  • Fresh Salmon4 unit(s)
  1. Make a vegetable broth. Place 1 onion and carrot (cut into large cubes) in a pan and add the bay leaf, 3 grains of black pepper and leave on low heat for 40 minutes. If you want to put celery and leek stalks, the broth is better.
  2. When the broth is ready, sauté (in another pan) 1/2 onion cut very small with butter and a little oil so the butter doesn't burn. When the onion is translucent add the rice and sauté a little.
  3. Add the white wine and wait for it to evaporate, then start with the vegetable broth. The right time to add the broth is when you no longer smell the alcohol.
  4. Gradually add the broth ladles and stir constantly to release starch and become very creamy. After about 15 to 17 minutes the rice will be al dente and ready to finish. Turn off the pan, add the butter, Parmesan, lemon juice and stir very quickly to give it shine and creaminess. If necessary, adjust salt and black pepper. Also add the nutmeg to taste.
  5. Take the salmon fillets (average 120g each) and season with freshly ground black pepper and salt to taste on one side, turn and put just salt on the other side. Place in a hot skillet with olive oil and always fry skin side down first. After 4 minutes, turn the other side and leave for another 2 minutes. Turn again (this time with the sides of the steak down and leave another 1 minute on each side).
  6. Serve the risotto with the steak on top and lemon zest. Enjoy your food.

This dish that has become one of the most appreciated cuisines in several countries around the world has its origin in Italy, you know? It was in the 11th century, more precisely in Lombardy, located further south in that country.
