  • Salmon Filet with Skin1 kg
  • Demerara sugar175 g
  • Coarse sea salt250 g
  • Brown sugar75 g
  • Dill Dill1 cup
  • Gin (or other spirit)50 ml
  • Coarsely crushed black pepper1 tablespoon
  1. Mix the salt and sugars with the dil and pepper.
  2. Line a serving dish with enough plastic wrap to wrap the salmon.
  3. Place the piece on the film and cover with the seasoning mixture. Wrap all fillets with film. Put some weight on it. It could be a bean bag.
  4. Place in the fridge for at least 12 hours.
  5. Drain the liquid, remove excess seasoning, but do not wash. Cut into thin slices and use to stuff whatever you want.
