- Fish fillets (hake and hake etc)4 unit(s)
- Juice of one lemon1 tablespoon
- Salt and freshly ground pepper1 to taste
- Wheat flour2 cup
- Beaten eggs (mixed)3 unit(s)
- Milk250 ml
- Season the fillets with salt, pepper and lemon just before you prepare them. In the blender place the eggs, milk, a pinch of salt and a drizzle of oil. Beat to mix and add wheat flour until you get a thick cream (similar to pancake dough). Heat a good amount of oil in a heavy skillet. Once the oil is hot (on medium heat), pass the seasoned fillets through the prepared dough (drain a little) and fry one unit at a time in the oil. Turn carefully to brown the other side as this dough is very sensitive (don't let it darken too much). Remove with a slotted spoon and drain on paper towels.
