  • Baroa potato (cassava)500 g
  • Milk100 ml
  • Butter1 tablespoon
  • Salt to taste
  • Tomato to taste
  • Black olive to taste
  • Fine herbs to taste
  • Olive oil to taste
  1. I bought cod already desalted. If you buy the normal one, the first step is to desalt it, changing the water several times.
  2. Season the cod I seasoned with fine herbs and lots of olive oil.
  3. Take the cod fillets to bake in a non-stick pan Bake at 200oC for approximately 1h20
  4. Cook the baroa potato in a pressure cooker for 20 minutes. Wait for the cooker to lose pressure.
  5. Once cooked, mash the potato well.
  6. In a pan sauté garlic and onion (to taste) Add the baroa potato, stir well. Add the milk little by little always stirring add salt to taste And finally add the butter
  7. Then just assemble the plate Place the puree and cod on top Put the tomatoes, black olives and if you want, you can put some basil leaves too, it's delicious!
