- Baroa potato (cassava)500 g
- Milk100 ml
- Butter1 tablespoon
- Salt to taste
- Tomato to taste
- Black olive to taste
- Fine herbs to taste
- Olive oil to taste
- I bought cod already desalted. If you buy the normal one, the first step is to desalt it, changing the water several times.
- Season the cod I seasoned with fine herbs and lots of olive oil.
- Take the cod fillets to bake in a non-stick pan Bake at 200oC for approximately 1h20
- Cook the baroa potato in a pressure cooker for 20 minutes. Wait for the cooker to lose pressure.
- Once cooked, mash the potato well.
- In a pan sauté garlic and onion (to taste) Add the baroa potato, stir well. Add the milk little by little always stirring add salt to taste And finally add the butter
- Then just assemble the plate Place the puree and cod on top Put the tomatoes, black olives and if you want, you can put some basil leaves too, it's delicious!
