- Desalted cod fillets6 unit(s)
- Medium Potato10 unit(s)
- Boiled Eggs6 unit(s)
- Small onions6 unit(s)
- Ground garlic cloves8 unit(s)
- Whole pitted black olives1 cup
- Whole pitted green olives1 cup
- Sliced Yellow Bell Pepper1 unit(s)
- Sliced Red Bell Pepper1 unit(s)
- Extra virgin olive oil4 cup
- Salt to taste
- Ground black pepper to taste
- Chopped Parsley to taste
- Boil the eggs and set aside
- Fill a large pot with water and place the whole potatoes with the skin and the cod pieces, add a little olive oil (2 tablespoons), place over medium heat and wait for it to boil, remove the cod pieces and set aside
- Let the potatoes cook until they are cooked and set aside
- Place the cod pieces, boiled potatoes, green and black olives, red and yellow pepper slices, onions, garlic, parsley, olive oil and season with salt and ground black pepper to taste in a baking dish, cover with aluminum foil
- Bake in a preheated oven at 180 degrees for about 20 minutes, carefully remove the aluminum foil and try the codfish to see if it is very soft and cooked, bake for another 10 minutes if necessary until it reaches the desired point (soft and cooked without getting dry)
- Serve with the boiled eggs separately or cut the eggs and place on top 😉
