- medium zucchinis grated in the coarse grater2 unit(s)
- Beaten eggs2 unit(s)
- boiling water1 cup
- Chopped parsley2 tablespoon
- chopped basil1 tablespoon
- raw cassava flour1 cup
- In a medium saucepan, melt the margarine and sauté the onion until golden.
- Add the zucchini and the broth dissolved in the boiling water. Cook over low heat for about 10 minutes.
- Add the eggs, basil and parsley, stirring quickly with a fork.
- Add the flour and mix well until heated through. Serve it hot.
