- Olive oil, salt, black pepper and spices to taste
- Grate the zucchini without the core and seeds. In a pan, sauté the minced garlic in a little oil until golden. Then add the grated zucchini, salt and black pepper to taste and sauté for 5 minutes.
- Meanwhile, in a separate skillet with olive oil, crack the eggs, season with salt and pepper to taste and make as if they were scrambled eggs.
- Place the scrambled eggs in the pan where the zucchini is and stir well. Turn off the heat, add the corn flour, 1 tablespoon of olive oil, stir well, taste and adjust the salt if necessary. It's ready, enjoy!
