Derreta numa panela a manteiga e junte a farinha. 

Melt the butter in a pan and add the flour.

Deixe cozinhar em fogo médio, mexendo sempre por 2 minutos. 

Cook over medium heat, stirring constantly for 2 minutes.

Junte o leite todo de uma vez, de preferência em temperatura ambiente. Mexa com um batedor de arame, junte a mussarela ralada e deixe cozinhar por 10 minutos. 

Add the milk all at once, preferably at room temperature. Stir with a wire whisk, add the grated mozzarella and cook for 10 minutes.

Finalize acertando o sal e com a noz moscada. Sirva com massas, peixe e carnes.

Finish by hitting the salt and nutmeg. Serve with pasta, fish and meat.
